Decadent Cookie Gelato Tart with Caramelized Toffee Crunch
Ingredients
- 2 cups cookie crumbs (use your favorite cookies, finely crushed)
- 1/2 cup unsalted butter, melted
- 1 pint gelato (any flavor of your choice)
- 1/2 cup toffee bits
- 1/4 cup brown sugar
- 1 tablespoon heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F.
- In a medium-sized mixing bowl, combine the 2 cups of cookie crumbs with 1/2 cup melted unsalted butter. Mix until well blended and the mixture resembles wet sand.
- Press the cookie mixture evenly into the base of a 9-inch tart pan, ensuring the crust is firm and packed tightly. Use the back of a spoon or a flat-bottomed glass to level the surface.
- Bake the crust in the preheated oven at 350°F for about 10 minutes or until golden brown. Remove from the oven and let it cool completely on a wire rack.
- While the crust cools, soften the gelato by placing it at room temperature for about 5 minutes. Stir gently for even consistency.
- Once the crust is entirely cool, evenly spread the pint of softened gelato over the crust using a spatula. Place the tart in the freezer to set for at least 2 hours.
- To create the caramelized toffee topping, combine 1/2 cup toffee bits, 1/4 cup brown sugar, 1 tablespoon heavy cream, and a pinch of salt in a small saucepan over medium heat. Stir continuously until the sugar has dissolved and the mixture thickens slightly, approximately 3-5 minutes.
- Remove from heat and stir in 1 teaspoon vanilla extract. Allow the toffee mixture to cool slightly.
- Once the tart is set, pour the cooled caramelized toffee mixture over the top of the gelato. Spread evenly using a spatula, working quickly before the topping hardens.
- Return the tart to the freezer for an additional 30 minutes before serving for best results.
- To serve, slice with a warm, dry knife for clean cuts.
