Decadent Creamy Broccoli and Cheddar Soup
Ingredients

Instructions
1. Heat Butter and Oil:
- In a large pot over medium heat, combine 2 tablespoons of butter with 1 tablespoon of olive oil and allow the butter to melt completely and the mixture to become hot.
2. Cook Aromatics:
- Add the finely chopped onion to the pot and sauté until translucent, approximately PT5M.
- Add the minced garlic and continue to cook for an additional PT1M until fragrant.
3. Add Vegetables and Broth:
- Stir in the broccoli florets and diced potatoes into the pot, stirring well to coat them with the butter and oil mixture.
- Add 3 cups of chicken broth, 1 cup of veggie broth, and 2 cups of water, ensuring that the vegetables are submerged.
4. Simmer with Seasonings:
- Drop the bay leaf into the pot, and season the soup with salt, black pepper, and red pepper flakes.
- Stir in 1 tablespoon of Dijon mustard and 1 teaspoon of fish sauce.
- Bring the mixture to a boil, then reduce the heat to a simmer and cover the pot.
- Let it simmer for about PT20M until the potatoes are fork-tender.
5. Puree the Soup:
- Remove the bay leaf.
- Use an immersion blender to carefully blend the soup to a smooth consistency. Alternatively, work in batches to blend the soup in a standard blender.
6. Incorporate Cream and Cheese:
- Return the soup to the pot if necessary and stir in the heavy cream.
- Over low heat, gently stir in the shredded sharp cheddar cheese in batches, allowing each to melt before adding more.
7. Final Touches:
- Serve hot, garnished with chopped chives for added color and flavor.
