Decadent Dark Chocolate Soufflé
Ingredients

Instructions
1. Preheat and Prep:
- Preheat the oven to 375°F (190°C).
- Grease four 8-ounce ramekins with unsalted butter, then dust with granulated sugar, ensuring an even coating to help the soufflé rise properly.
2. Make the Base:
- Melt 3 tablespoons of unsalted butter in a medium saucepan over medium heat.
- Stir in 3 tablespoons of all-purpose flour, cooking for about 1 minute until a smooth paste forms.
- Gradually whisk in 1 cup of whole milk, ensuring no lumps form, and cook until the mixture thickens, about 3-4 minutes.
- Remove from heat and whisk in 1/2 cup cocoa powder until smooth.
- Let the mixture cool slightly before adding 4 large egg yolks one at a time, stirring well after each addition.
3. Beat the Egg Whites:
- In a clean mixing bowl, beat 5 large egg whites with 1/4 teaspoon of cream of tartar and 1/4 teaspoon of salt until soft peaks form.
- Gradually add 2 tablespoons of granulated sugar and continue beating until firm peaks form.
4. Combine Mixtures:
- Gently fold the egg whites into the cocoa mixture in thirds, being careful not to deflate the mixture.
- Fold in 1 teaspoon of vanilla extract and 1/2 cup of semi-sweet chocolate chips until evenly distributed.
5. Fill and Bake:
- Spoon the mixture into the prepared ramekins, filling just below the rim.
