Decadent Double Chocolate Banana Bread
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup or agave nectar
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/3 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1/4 cup chopped nuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper, allowing some overhang on the sides for easy removal.
2. In a large mixing bowl, combine the mashed bananas, unsweetened applesauce, maple syrup (or agave nectar), melted coconut oil, and vanilla extract. Whisk until smooth and well integrated.
3. In a separate bowl, sift together the whole wheat flour, cocoa powder, baking powder, and salt.
4. Gradually add the dry ingredients to the banana mixture, folding gently with a spatula until just combined. Be careful not to overmix, as this can make the bread dense.
5. Fold in the dark chocolate chips and chopped nuts, ensuring even distribution throughout the batter.
6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
7. Bake in the preheated oven for approximately 50 minutes, or until a toothpick inserted into the center of the bread comes out clean or with minimal crumbs.
8. Allow the bread to cool in the pan for 10 minutes. Then, use the parchment paper to lift it out and place on a wire rack to cool completely before slicing and serving.
