Decadent Double Chocolate Peppermint Brownies
Ingredients
For the Brownies:
- 1 cup sugar
- 3/4 cup brown sugar, packed
- 1 cup canola oil
- 1 teaspoon vanilla extract
- 3 large eggs
- 3/4 cup unsweetened cocoa powder
- 1 1/4 cups all-purpose flour

- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons shortening
- 2 tablespoons light corn syrup
Instructions
1. Preheat and Prepare the Pan:
- Preheat your oven to 350°F (175°C).
- Grease a 9x9-inch baking pan and line with parchment paper, allowing a slight overhang for easy removal.
2. Mix the Brownie Batter:
- In a large bowl, combine sugar, brown sugar, canola oil, and vanilla extract. Beat in eggs one at a time until smooth.
- Gradually incorporate cocoa powder, flour, baking powder, and salt, stirring until just blended.
- Fold in semi-sweet chocolate chips.
3. Bake the Brownies:
- Pour batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 30-35 minutes until a toothpick inserted in the center comes out clean.
- Allow the brownies to cool completely in the pan on a wire rack.
4. Make the Peppermint Frosting:
- In a medium bowl, beat the softened butter until creamy.
- Gradually add powdered sugar, alternating with evaporated milk, until smooth and fluffy.
- Stir in peppermint extract.
- Spread evenly over cooled brownies.
5. Prepare the Chocolate Glaze:
- In a microwave-safe bowl, combine chocolate chips, shortening, and corn syrup.
- Microwave in 30-second intervals, stirring until melted and smooth.
- Drizzle over peppermint frosting layer.
6. Chill and Serve:
- Refrigerate brownies for at least 1 hour to set the frosting and glaze.
- Remove from pan using parchment overhang, cut into squares, and serve.
