Decadent Espresso Chocolate Chunk Cookies
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon espresso powder
- 2 cups chocolate chunks
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Cream Butter and Sugars
In a large mixing bowl, using a hand mixer or stand mixer fitted with a paddle attachment, beat the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3 minutes.
3. Add Eggs and Vanilla
Add the vanilla extract and eggs, one at a time, beating well after each addition until fully incorporated.
4. Combine Dry Ingredients
In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder until well combined.
5. Mix Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
6. Fold in Chocolate Chunks
Gently fold in the chocolate chunks with a spatula until evenly distributed throughout the dough.
7. Portion the Dough
Using a cookie scoop or tablespoon, drop rounded portions of dough onto ungreased baking sheets, leaving about 2 inches between each cookie to allow for spreading.
8. Bake the Cookies
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers still look slightly soft. Avoid overbaking to keep them chewy.
9. Cool
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
