Decadent Gruyère Potato Gratin

Ingredients

- 2 lbs Yukon Gold potatoes, peeled and thinly sliced
- 2 tbsp unsalted butter, plus extra for greasing
- 1 medium sweet onion, finely chopped
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 1 1/2 tsp fine sea salt
- 1/2 tsp fresh ground black pepper
- 1/2 tsp garlic powder
- 1 tbsp fresh thyme leaves, plus extra for garnish
- 2 cups Gruyère cheese, grated

Instructions

1. Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter and set aside.

2. Prepare the Cheese Sauce
- In a medium saucepan, melt 2 tbsp of butter over medium heat.
- Add the chopped sweet onion and sauté for about 5 minutes, until softened and translucent.
- Sprinkle the flour over the onions, stirring continuously for about 1 minute to create a paste.

3. Thicken the Sauce
- Gradually whisk in the whole milk and heavy cream, ensuring there are no lumps.
- Continue to cook, whisking constantly, until the mixture thickens slightly, around 5-7 minutes.

4. Season the Sauce
- Stir in 1 1/2 tsp fine sea salt, 1/2 tsp freshly ground black pepper, 1/2 tsp garlic powder, and 1 tbsp fresh thyme leaves.
- Remove from heat.

5. Assemble the Gratin
- Place a layer of sliced Yukon Gold potatoes in the prepared baking dish.
- Pour a portion of the cream sauce over the potatoes and sprinkle with a layer of Gruyère cheese.
- Repeat the layers, finishing with a generous top layer of cheese.

6. Bake the Gratin
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake an additional 20-30 minutes, until the top is golden brown and the potatoes are tender when pierced with a knife.

7. Garnish and Serve
- Let the gratin cool for a few minutes before garnishing with extra fresh thyme leaves.
- Slice and serve warm.
