Decadent Honeycomb Ice Cream Parfait



Ingredients



- 2 cups Tillamook French Vanilla Ice Cream
- 1 cup Heavy Cream
- 1 cup Half and Half
- 3/4 cup Sugar
- 1 teaspoon Vanilla Extract
- 4 Egg Yolks
- 1 cup Graham Crackers, crushed
- 1/2 teaspoon Cinnamon
- 2 tablespoons Butter, melted
- 2 tablespoons Honey
- 1/4 cup Water
- 4 Violet Crumble or Chuao Honeycomb Candy Bars, chopped

Instructions



1. Prepare the Custard Base:
- In a medium saucepan, combine the heavy cream, half and half, and sugar over medium heat. Stir until the sugar completely dissolves and the mixture is heated without boiling (approximately PT5M / 5 minutes).
- In a separate bowl, whisk together the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks while whisking continuously to temper the eggs.
- Pour the tempered yolks back into the saucepan with the remaining cream mixture. Stir continuously over low heat until the mixture thickens and coats the back of a spoon (approximately PT8M / 8 minutes).
- Remove from heat and stir in vanilla extract. Set aside to cool to room temperature and then refrigerate for at least PT30M / 30 minutes.

2. Construct the Graham Cracker Base:
- Mix Graham crackers, cinnamon, melted butter, and honey in a bowl. Spread the mixture onto a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for PT10M / 10 minutes. Let it cool once done.

3. Assemble the Parfait:
- In a serving glass, add a layer of Tillamook French Vanilla Ice Cream, followed by a layer of chilled custard base.
- Add a layer of the graham cracker mixture, then sprinkle chopped Violet Crumble or Chuao Honeycomb Candy Bars on top.
- Repeat the layering process until you reach the top of the glass, finishing with a dollop of whipped cream and a final sprinkle of candy.

4. Serve Immediately:
- Serve the parfaits immediately for the best texture, and enjoy the luscious combination of flavors and textures.
