Decadent Lentil and Tomato Dessert Pudding
Ingredients
- 1 cup red lentils
- 1 1/2 cups water
- 1 1/2 cups ripe tomatoes, peeled and chopped
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon unsalted butter
- Pinch of salt
Instructions
1. Prepare the Lentils
Place 1 cup of red lentils in a fine mesh strainer and rinse under cold water until the water runs clear. This step helps remove excess starch and prevents a gummy texture.
2. Cook the Lentils
In a medium saucepan, combine the rinsed lentils with 1 1/2 cups of water. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about PT15M (15 minutes), or until the lentils are soft and tender, stirring occasionally.
3. Prepare the Tomato Mixture
Meanwhile, in another saucepan, add 1 1/2 cups of peeled and chopped tomatoes with the juice, 1/2 cup granulated sugar, and a pinch of salt. Simmer over medium heat, stirring occasionally, until the tomatoes break down and the mixture thickens slightly. This should take about PT10M (10 minutes).
4. Combine Lentils and Tomatoes
Once the lentils are cooked, add them to the tomato mixture. Stir in the 1/4 cup honey, 1 teaspoon vanilla extract, 1/4 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Add the 1 tablespoon butter and stir until melted. Let the mixture cook for an additional PT5M (5 minutes) until thick and creamy.
5. Cool and Serve
Remove the mixture from heat and allow it to cool slightly. Serve the Lentil and Tomato Dessert Pudding warm, or refrigerate for a few hours and serve chilled, topped with a dollop of whipped cream or a sprinkle of nuts for added texture.
