Decadent Mango Macadamia Nut Tart
Ingredients
- Cooking Spray
- 1 cup Macadamia Nuts, finely chopped
- 1/4 cup Granulated Sugar
- 1 cup All-Purpose Flour
- 1/2 cup Unsalted Butter, melted
- 1/4 cup Fresh Orange Juice
- 1 envelope Unflavored Gelatin
- 2 ripe Mangos, peeled, pitted, and pureed
- 1 tablespoon Fresh Lemon Juice
- 1 cup Heavy Cream
- 1/2 cup Confectioners’ Sugar
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F.
- Lightly coat a 9-inch tart pan with cooking spray.
- In a mixing bowl, combine the finely chopped macadamia nuts, granulated sugar, and all-purpose flour.
- Pour the melted butter over the dry ingredients and mix until the mixture resembles wet sand.
- Press the mixture evenly into the bottom and up the sides of the prepared tart pan.
- Bake in the preheated oven for 12 to 15 minutes, or until golden brown. Remove from the oven and let it cool completely.
2. Prepare the Mango Filling:
- In a small saucepan, bring the orange juice to a simmer over medium heat.
- Sprinkle the gelatin over the hot orange juice, stirring constantly until completely dissolved.
- In a large bowl, combine the mango puree and lemon juice.
- Stir in the dissolved gelatin mixture and ensure it’s well integrated.
- Set aside to cool slightly.
3. Prepare the Cream Topping:
- In a chilled bowl, whip the heavy cream and confectioners’ sugar together until soft peaks form.
- Gently fold half of the whipped cream mixture into the mango mixture until well combined.
4. Assemble the Tart:
- Pour the mango filling over the cooled crust, smoothing the top with a spatula.
- Refrigerate the tart for at least 2 hours, or until the filling is set.
5. Add the Finishing Touch:
- Before serving, spread the remaining whipped cream over the top of the set mango filling.
- Optionally, garnish with additional macadamia nuts or mango slices for an enhanced presentation.
