Decadent Microwave Butter Toffee



Ingredients



- 1 cup unsalted butter, cut into pieces
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1/4 cup water
- 1/2 cup semisweet chocolate chips
- 1/4 cup chopped nuts (e.g., almonds, pecans)

Instructions



1. Preparation Phase:
- Begin by preparing a microwave-safe, high-heat resistant dish (preferably glass), at least 2 quarts in size.
- Lightly grease the dish with butter to prevent sticking.

2. Toffee Preparation:
- In the prepared dish, combine the butter, granulated sugar, vanilla extract, salt, and water.
- Stir gently with a heat-resistant spoon until all ingredients are roughly combined.

3. Cooking the Toffee in the Microwave:
- Place the dish into the microwave and set it to high power. Microwave for PT3M (3 minutes).
- Carefully remove the dish (using oven mitts, as it will be hot), and stir the mixture to ensure even cooking.
- Return the dish to the microwave and continue microwaving on high power for another PT10M (10 minutes), stopping every 2 minutes to stir.
- The mixture should reach a deep amber color and a hard-crack stage (around 300°F if using a candy thermometer).

4. Chocolate and Nut Layer:
- Remove the dish from the microwave and immediately sprinkle the chocolate chips over the hot toffee.
- Let the chocolate sit for about 1 minute until it begins to melt.
- Spread the melted chocolate evenly over the surface using a spatula.
- Quickly sprinkle the chopped nuts over the chocolate layer, pressing them into the chocolate gently.

5. Setting the Toffee:
- Allow the toffee to cool at room temperature completely or refrigerate for about PT1H (1 hour) until the toffee is firm and set.

6. Final Touch:
- Once set, break the toffee into bite-sized pieces using your hands or a sharp knife.
- Store in an airtight container to keep it fresh and crispy.
