Decadent Microwave Chocolate Mousse
Ingredients
- 8 ounces semisweet chocolate, chopped
- 12 ounces soft or silken tofu, drained and patted dry
- 1/8 teaspoon kosher salt
- Optional toppings:
- Whipped cream
- Shaved chocolate
- Cocoa powder
- Fresh berries
Instructions
1. Melt the Chocolate:
- Place the chopped semisweet chocolate in a microwave-safe bowl.
- Microwave on high in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. This should take about 1 to 1.5 minutes total.
2. Prepare the Tofu Mixture:
- In a blender or food processor, add the soft or silken tofu and a pinch of kosher salt.
- Blend on high speed until the tofu is smooth and creamy.
3. Combine Ingredients:
- Add the melted chocolate to the blended tofu mixture.
- Blend the mixture until fully combined, stopping to scrape down the sides as needed. The mixture should be silky and homogenous.
4. Chill the Mousse:
- Transfer the chocolate mousse to serving glasses or ramekins.
- Refrigerate for at least 2 hours, or until set and chilled.
5. Garnish and Serve:
- Before serving, top each mousse with your choice of optional toppings: a dollop of whipped cream, shavings of chocolate, a sprinkle of cocoa powder, or fresh berries.
