Decadent Miso Butter Mochi with Caramelized Soybean Crust



Ingredients



- Main Components
- 1 cup red miso
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar

- 1 cup barley flour
- 1 cup rice flour
- 1/4 cup sugar

- Soybean Caramelization
- 1/2 cup dried soybeans, cooked and drained
- 2 tablespoons brown sugar
- 1 tablespoon butter

Instructions



1. Prepare the Miso Butter
- In a mixing bowl, combine softened butter and red miso until smooth.
- Gradually add brown sugar to the mixture, blending until creamy and homogeneous.

2. Create the Mochi Batter
- Preheat your oven to 350°F (175°C).
- In a separate bowl, sift together barley flour, rice flour, and sugar.
- Gradually incorporate the dry mixture into the miso butter, combining until a smooth batter forms.
- Pour the mochi batter into a greased 9x9 inch baking pan, spreading it evenly.

3. Caramelize the Soybeans
- In a small saucepan, melt 1 tablespoon of butter over medium heat.
- Add cooked and drained soybeans, sautéing until they begin to brown.
- Sprinkle 2 tablespoons of brown sugar over the soybeans and continue cooking until the sugar melts and forms a caramel coating.

4. Assemble and Bake
- Evenly scatter the caramelized soybeans over the surface of the mochi batter.
- Place the baking pan in the preheated oven and bake for 30 minutes until the mochi is set and begins to pull away from the sides of the pan.

5. Cool and Serve
- After baking, allow the mochi to cool in the pan for at least 10 minutes.
- Cut into squares and serve slightly warm or at room temperature.
