Decadent Oreo Coffee Cake with Honey Cinnamon Pecans
Ingredients
- 1 cup pumpkin puree
- 1/2 cup sour cream
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 2 large eggs
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 2 tablespoons honey
- 1 tablespoon sweet potatoes, mashed
- 1/2 cup peanut butter
- 1 teaspoon Sriracha
- 1 teaspoon sesame oil
- 2 teaspoons fresh garlic, minced
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 12 Oreo cookies, crushed
- 1/2 cup unsalted butter, melted
- 1/2 cup cottage cheese
- 1/2 cup chocolate chips
Instructions
1. Preheat the Oven
Set your oven to 350°F (175°C) and allow it to fully preheat.
2. Prepare the Baking Dish
Grease a 9x9-inch baking pan with a thin coating of oil or cooking spray. Set aside.
3. Mix Wet Ingredients
In a large mixing bowl, combine the pumpkin puree, sour cream, orange juice, soy sauce, eggs, brown sugar, and melted butter. Whisk until the mixture is smooth and uniform.
4. Integrate Dry Ingredients
In a separate bowl, sift together the flour, baking soda, cinnamon, and salt. Gradually add these dry ingredients to the wet mixture, folding until just combined.
5. Add Crunch and Spice
Stir in the chopped pecans, mashed sweet potatoes, and chocolate chips. Fold in fresh garlic, and a touch of Sriracha for a spicy kick.
6. Prepare the Crunchy Topping
In a small bowl, combine honey, cinnamon, crushed Oreo cookies, and sesame oil. Mix well and sprinkle this mixture evenly across the top of the cake batter.
7. Layer the Cake
Pour half of the batter into the prepared pan. Distribute dollops of peanut butter and cottage cheese across the batter. Pour the remaining batter on top and spread it evenly.
8. Bake the Cake
Place the cake in the preheated oven and bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
9. Cool and Serve
Remove the cake from the oven and allow it to cool in the pan for at least 15 minutes before cutting into squares and serving.
