Decadent Oven-Baked Chocolate Soufflé



Ingredients



- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter, plus extra for greasing
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon cream of tartar
- Pinch of salt
- Powdered sugar, for dusting

Instructions



1. Preparation:
Preheat your oven to 375°F (190°C). Grease four individual ramekins with butter, making sure to fully cover the bottom and sides. Set the ramekins on a baking sheet.

2. Melt Chocolate:
In a heatproof bowl over simmering water (double boiler), melt the chocolate and 2 tablespoons of unsalted butter. Stir until smooth, then remove from heat. Let it cool slightly.

3. Egg Yolk Mixture:
In a separate bowl, beat the egg yolks with the vanilla extract until smooth. Gradually add the melted chocolate to the egg yolk mixture, stirring continuously to combine.

4. Beat Egg Whites:
In another clean, dry bowl, beat the egg whites with cream of tartar and a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue beating until stiff, glossy peaks form.

5. Combine Mixtures:
Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Carefully fold in the remaining egg whites, being cautious not to deflate them.

6. Fill Ramekins:
Divide the soufflé batter evenly among the prepared ramekins, filling each nearly to the top. Run your thumb around the edge of each ramekin to create a "top hat" effect as they bake.

7. Bake:
Place the baking sheet with ramekins into the preheated oven. Bake for about 12 to 15 minutes, or until the soufflés have risen and have a slight wobble in the center.

8. Serve Immediately:
Remove from the oven and dust with powdered sugar. Serve immediately for the best texture and enjoyment.
