Decadent Pumpkin Chocolate Brownies
Ingredients
- 3/4 cup pumpkin purée
- 2 large eggs
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/3 cup coconut oil, melted, or vegetable oil
- 1/4 teaspoon salt
- 3/4 cup cocoa powder
- 1 teaspoon instant coffee powder (optional)
- 1 teaspoon pumpkin spice (optional)
- 1/2 cup semisweet chocolate chips
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper or lightly grease it with oil for easy brownie removal.
2. Mix Wet Ingredients:
In a large mixing bowl, combine the pumpkin purée, eggs, honey or maple syrup, vanilla extract, and melted coconut oil. Whisk until the mixture is well incorporated and smooth.
3. Incorporate Dry Ingredients:
Add the cocoa powder, salt, instant coffee powder (if using), and pumpkin spice (if using) to the wet ingredients. Gently fold in the dry ingredients until fully mixed and the batter is a uniform dark chocolate color.
4. Add Chocolate Chips:
Fold in the semisweet chocolate chips, ensuring they are evenly distributed throughout the batter.
5. Transfer to Baking Pan:
Pour the brownie batter into the prepared baking pan. Use a spatula to spread it evenly to the edges of the pan.
6. Bake:
Place the pan into the preheated oven and bake for about 25 minutes. Check the brownies by inserting a toothpick into the center—if it comes out with a few moist crumbs, they’re done. Avoid overbaking for fudgier brownies.
7. Cool and Serve:
Allow the brownies to cool in the pan on a wire rack for at least 15 minutes before slicing and serving. Enjoy your rich and flavorful pumpkin chocolate brownies!
