Decadent Pumpkin Chocolate Chip Bread
Ingredients
- 1 and 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup pumpkin purée
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
Instructions
1. Preheat the Oven:
- Set your oven to 350°F (175°C) and allow it to preheat while you prepare the batter.
2. Prepare the Baking Pan:
- Grease and flour a 9x5-inch loaf pan to prevent sticking and set it aside.
3. Combine Dry Ingredients:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt until well mixed.
4. Mix Wet Ingredients:
- In another bowl, lightly beat the eggs, add the pumpkin purée, canola oil, and vanilla extract. Stir until smooth and homogeneous.
5. Incorporate Wet and Dry Ingredients:
- Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix to keep the bread tender.
6. Add Chocolate Chips:
- Fold in the mini chocolate chips, distributing evenly throughout the batter.
7. Transfer Batter to Pan:
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
8. Bake:
- Place the loaf pan in the preheated oven and bake for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool:
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
