Decadent Pumpkin Chocolate Chip Breakfast Loaf
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs
- 1 cup pumpkin purée
- 1/2 cup whole milk
- 1 tablespoon vanilla bean paste or extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
1. Preheat Oven
Set your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick cooking spray.
2. Cream Butter and Sugars
In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy, about 3-5 minutes using an electric mixer on medium speed.
3. Add Wet Ingredients
Beat in the eggs, one at a time, mixing well after each addition. Then, add the pumpkin purée, whole milk, and vanilla bean paste or extract. Continue to mix until the ingredients are well combined.
4. Prepare Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
5. Combine Ingredients
Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix to ensure a tender loaf.
6. Incorporate Chocolate Chips
Gently fold in the chocolate chips with a spatula or wooden spoon, ensuring an even distribution throughout the batter.
7. Fill and Bake
Pour the batter into the prepared loaf pan, smoothing out the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool and Serve
Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature for a delicious breakfast treat.
