Decadent Pumpkin Spice Cheesecake



Ingredients



For the Crust:
- 1 ½ cups digestive biscuits or graham crackers, crushed
- ¼ cup sugar
- ½ cup unsalted butter, melted
- 1 teaspoon ground cinnamon

For the Filling:
- 24 oz cream cheese, softened
- 1 ¼ cups sugar
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 cup sour cream
- 3 large eggs
- 1 cup pumpkin puree
- 1 teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves

Instructions



1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine 1 ½ cups of crushed digestive biscuits or graham crackers, ¼ cup sugar, ½ cup melted unsalted butter, and 1 teaspoon ground cinnamon until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
- Bake the crust in the preheated oven for 10 minutes.
- Remove from the oven and let cool.

2. Prepare the Filling:
- Reduce the oven temperature to 325°F (160°C).
- In a large mixing bowl, beat 24 oz of softened cream cheese until smooth.
- Gradually add 1 ¼ cups of sugar, continuing to beat until fully combined and the mixture is creamy.
- Add ½ teaspoon salt, 1 teaspoon vanilla extract, and 2 tablespoons cornstarch, and mix thoroughly.
- Blend in 1 cup of sour cream until smooth.
- Add 3 large eggs, one at a time, mixing well after each addition.
- Stir in 1 cup pumpkin puree, 1 teaspoon ground ginger, ½ teaspoon ground nutmeg, and ¼ teaspoon ground cloves until fully incorporated and smooth.

3. Assemble and Bake the Cheesecake:
- Pour the filling over the cooled crust, smoothing the top with a spatula.
- Bake in the preheated oven for approximately 60-70 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the door, allowing the cheesecake to cool gradually for about 1 hour inside the oven.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
