Decadent Raspberry Almond Cheesecake Bars



Ingredients



Crust:
- 1 cup old-fashioned oats
- 1 cup almond flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract

Filling:
- 8 oz cream cheese, softened
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream

Raspberry Topping:
- 2 cups fresh raspberries
- 2 tablespoons lemon juice
- 2 tablespoons honey or maple syrup
- 1 tablespoon cornstarch

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

2. Prepare the Crust:
- In a mixing bowl, combine 1 cup of old-fashioned oats, 1 cup of almond flour, and 1/4 teaspoon of salt.
- Add 1/2 cup of melted unsalted butter, 1/4 cup of honey or maple syrup, and 1 teaspoon of vanilla extract. Mix until well combined.
- Press the mixture evenly into the bottom of an 8x8 inch baking dish lined with parchment paper.
- Bake in the preheated oven for about 10 minutes until lightly golden. Remove and allow to cool slightly.

3. Make the Filling:
- In a large bowl, beat 8 oz of softened cream cheese with 1/4 cup of honey or maple syrup until smooth.
- Add 1 teaspoon of vanilla extract, 2 large eggs, and 1/4 cup of sour cream. Mix until completely combined and smooth.
- Pour the cream cheese mixture over the cooled crust and spread evenly.

4. Create the Raspberry Topping:
- In a small saucepan over medium heat, combine 2 cups of raspberries, 2 tablespoons of lemon juice, 2 tablespoons of honey or maple syrup, and 1 tablespoon of cornstarch.
- Cook while stirring until the mixture thickens and bubbles appear, about 5-7 minutes.
- Allow to cool slightly, then gently spoon over the cheesecake layer, swirling slightly with a knife for a marbled effect.

5. Bake the Bars:
- Return the baking dish to the oven and bake for 25-30 minutes, or until the center is set.
- Let cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.
