Decadent Rhubarb Cinnamon Nut Cake
Ingredients
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 2 cups rhubarb, diced

Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a little vegetable oil or non-stick spray.
2. Prepare the Wet Ingredients
In a large mixing bowl, beat together brown sugar and vegetable oil until well mixed. Add the egg and vanilla extract, and continue to mix until smooth and creamy.
3. Incorporate Buttermilk and Baking Soda
Gently mix in the buttermilk. Sprinkle in the baking soda and salt. Stir until everything is combined.
4. Mix the Dry Ingredients and Rhubarb
Gradually add in the all-purpose flour to the wet mixture, folding carefully. Once the flour is fully incorporated, stir in the diced rhubarb, ensuring it is evenly distributed throughout the batter.
5. Prepare the Topping
In a small bowl, combine the granulated sugar, ground cinnamon, and chopped nuts. Mix thoroughly.

Pour the batter into the prepared baking dish, smoothing the top with a spatula. Evenly sprinkle the cinnamon-nut topping over the batter.
