Decadent Spaghetti Carbonara with Spring Vegetables
Ingredients
- 12 oz Spaghetti
- 6 slices Bacon, chopped
- 3 cloves Garlic, minced
- 4 large Eggs
- 1 cup Parmesan cheese, grated
- 1 cup Frozen Peas
- 1/2 lb Asparagus, chopped
- 1 cup Broccoli florets
- 1 cup Green Beans, trimmed and halved
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
- 1/2 teaspoon Red Pepper Flakes (optional)
- Pasta Water (from cooking)
Instructions
1. Preparation:
Place broccoli florets in a bowl with a little water and microwave them for 2 minutes until bright green and slightly tender. Prepare the frozen peas by leaving them at room temperature to thaw slightly. Trim and chop the asparagus and green beans.
2. Boiling Pasta:
Boil a large pot of salted water over medium-high heat. Once boiling, add 12 oz of spaghetti and cook until al dente, approximately PT10M (10 minutes). Reserve 1 cup of pasta water and then drain the rest.
3. Cook Bacon:
In a large, deep skillet, cook the chopped bacon over medium-high heat until crispy, about PT8M (8 minutes). Use a slotted spoon to transfer bacon to a paper towel-lined plate.
4. Sauté Vegetables:
Use the remaining bacon fat in the skillet; if necessary, add a tablespoon of olive oil. Add minced garlic and sauté for about PT1M (1 minute) until fragrant. Add asparagus, broccoli, and green beans to the skillet, and cook for further PT4M (4 minutes) until tender. Add the peas and red pepper flakes, stirring for PT1M (1 minute) until well combined.
5. Prepare Sauce:
In a bowl, whisk together 4 large eggs and 1 cup of grated Parmesan cheese. Season with a pinch of salt and pepper.
6. Combine:
Reduce skillet heat to low. Add the cooked spaghetti to the skillet, stirring to combine with the vegetables and bacon. Gradually pour in the egg and cheese mixture, stirring continuously to create a creamy sauce. If necessary, add reserved pasta water, a tablespoon at a time, until the sauce reaches your desired consistency.
7. Serve:
Taste and adjust seasoning with additional salt and pepper if necessary. Serve immediately, garnished with additional Parmesan and freshly cracked black pepper.
