Decadent Steak with Berry Chimichurri and Truffle-Cheddar Mushrooms



Ingredients



For the Steak and Berry Chimichurri:

- 2 large steaks (choose your favorite cut like ribeye)
- 2 cups dark blackberries
- 1 cup blueberries
- 2 tablespoons strawberry jam
- 1 teaspoon ground black pepper
- 2 tablespoons mixed fresh herbs (parsley, cilantro)
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Juice of 1 lime
- Salt to taste

For the Truffle-Cheddar Mushrooms:

- 4 large portobello mushrooms, cleaned and stems removed
- 1 cup Emporium Selection Gruyère-cheddar blend, shredded
- 1/4 cup Cocoa Cardona cheese, grated
- 1/4 cup truffle-scented Marcona almonds, crushed
- 1 teaspoon truffle oil
- Salt and pepper to taste

Instructions



1. Prep the Chimichurri:
- In a food processor, combine blackberries, blueberries, strawberry jam, black pepper, fresh herbs, garlic, olive oil, lime juice, and salt. Blend until smooth. Adjust seasoning as needed. Set aside.

2. Prepare the Truffle-Cheddar Mushrooms:
- Preheat the oven to 375°F.
- In a mixing bowl, combine the Gruyère-cheddar blend, Cocoa Cardona cheese, crushed Marcona almonds, and truffle oil. Season with salt and pepper.
- Stuff each portobello cap with the cheese mixture, pressing down to compact.
- Place stuffed mushrooms on a baking sheet lined with parchment paper.

3. Roast the Mushrooms:
- Transfer the mushrooms to the oven and bake for about 20 minutes or until the cheese is bubbly and golden brown.

4. Cook the Steaks:
- Season steaks with salt and black pepper. Place on a broiler rack or a baking sheet.
- Broil steaks in the preheated oven for about 5-7 minutes per side, depending on thickness and desired doneness.

5. Assemble the Dish:
- Once the steaks are done, remove them from the oven and let rest for a few minutes.
- Spoon the berry chimichurri generously over each steak.
- Serve the steaks alongside the roasted truffle-cheddar mushrooms.
