Decadent Stove-Top Hollandaise Sauce



Ingredients


- 3 large egg yolks
- 1/2 cup unsalted butter (1 stick)
- 1 tablespoon lemon juice
- 2 tablespoons white wine
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon ground white pepper

Instructions


1. Prepare the Ingredients:
Separate the egg yolks from the whites, and set aside the yolks in a small bowl. Cut the unsalted butter into small cubes to help it melt evenly during the cooking process.

2. Melt the Butter:
In a small saucepan, set over medium-low heat, melt the cubed butter until completely liquefied and lightly bubbling. Do not let it brown. This should take about 3-4 minutes. Once melted, remove from heat and keep warm.

3. Create a Double Boiler Setup:
Fill a medium saucepan with about two inches of water and bring to a gentle simmer over medium heat. Place a heatproof bowl that fits the saucepan securely on top without touching the water beneath.

4. Whisk the Egg Yolks:
In the heatproof bowl, add the egg yolks, lemon juice, and white wine. Whisk vigorously until the mixture becomes thick and pale, approximately 2-3 minutes.

5. Cook the Yolks:
Place the bowl over the simmering water pot. Continue to whisk constantly for about 3-5 minutes until the yolks are warm and frothy. Be careful not to overheat and scramble the eggs.

6. Incorporate the Butter:
Gradually whisk in the warm melted butter, a few tablespoons at a time, into the yolk mixture. Make sure each addition is fully emulsified before adding more. This process should take about 5 minutes and will result in a thick, silky sauce.

7. Season the Sauce:
Remove the bowl from the heat and whisk in the fine sea salt and ground white pepper. Taste and adjust seasoning if necessary.

8. Serve Immediately:
Serve the hollandaise sauce warm over your favorite breakfast dishes like eggs Benedict. The sauce does not store well, so it's best consumed fresh.
