Decadent Stove-Top Vanilla Custard
Ingredients
- 4 large eggs
- 1/2 cup honey
- 1 tablespoon vanilla bean paste
- 1/4 teaspoon salt
- 2 cups whipping cream
Instructions
1. Prepare the Eggs:
In a medium mixing bowl, whisk the eggs until they are well-blended and set aside.
2. Mix Honey and Flavorings:
In a saucepan, combine the honey, vanilla bean paste, and salt. Warm the mixture over medium heat, stirring frequently, until it becomes smooth and the salt has dissolved. This should take about 3-4 minutes.
3. Incorporate the Whipping Cream:
Gradually pour the whipping cream into the honey mixture, stirring continuously to ensure thorough integration. Continue to heat the mixture until small bubbles form around the edges, indicative of a light simmer, taking about 5-6 minutes. Do not allow the mixture to boil.
4. Combine with Eggs:
Slowly drizzle one cup of the hot cream mixture into the bowl with the whisked eggs, stirring constantly. This process, known as tempering, prevents the eggs from scrambling.
5. Thicken the Custard:
After tempering, pour the egg mixture back into the saucepan with the remaining cream. Cook the custard over low heat, stirring constantly with a wooden spoon or spatula until it thickens enough to coat the back of the spoon, approximately 8-10 minutes. Be cautious not to let it boil, as this can lead to curdling.
6. Strain and Cool:
Remove the custard from the heat and strain it through a fine-mesh sieve into a clean bowl to remove any solids for a silky texture. Allow it to cool to room temperature, stirring occasionally to prevent a skin from forming. Once cooled, cover and refrigerate it for at least 2 hours to set completely.
