Decadent Stove-Top Vodka Tomato Pancetta Pasta



Ingredients


- 8 ounces pasta (such as penne or rigatoni)
- 4 ounces pancetta, diced
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup vodka
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped

Instructions


1. Prepare the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

2. Cook the Pancetta:
- In a large skillet over medium heat, add 2 tablespoons of olive oil.
- Add the diced pancetta and sauté for about 4-5 minutes until golden and crispy. Remove with a slotted spoon and set aside.

3. Sauté Aromatics:
- In the same skillet, add the chopped onion. Sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and red pepper flakes, cooking for an additional 1 minute until fragrant.

4. Create the Sauce:
- Pour in the crushed tomatoes, stirring to combine with the onions and garlic. Allow the mixture to simmer gently.
- Carefully add the vodka, stirring well. Let the sauce simmer for about 7-8 minutes, reducing slightly.

5. Finish with Cream and Cheese:
- Lower the heat and stir in the heavy cream, allowing the sauce to return to a gentle simmer.
- Gradually mix in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.

6. Combine and Garnish:
- Add the cooked pasta and crispy pancetta to the sauce, tossing until fully coated and heated through.
- Serve immediately, garnished with fresh parsley.
