Decadent Strawberry Swirl Shortcakes with a Zesty Lemon Glaze
Ingredients
Strawberry Compote:
- 2 cups strawberries, hulled and quartered
- 1 tablespoon lemon juice
- 2 tablespoons water
- 1/4 cup white granulated sugar
- 1 tablespoon cornstarch
- 1 drop red food coloring (optional)
Shortcakes:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup white granulated sugar
- 1/2 cup butter, unsalted, cold and cubed
- 3/4 cup milk
For Serving:
- Whipped cream
- Vanilla ice cream
Instructions
1. Prepare the Strawberry Compote:
- In a small saucepan, combine strawberries, lemon juice, water, and sugar.
- Cook over medium heat until the mixture starts to bubble.
- In a small bowl, mix cornstarch with a splash of water to make a slurry.
- Stir the slurry into the strawberry mixture and cook until thickened, about 3-5 minutes.
- Remove from heat and add food coloring if using. Set aside to cool.
2. Make the Shortcakes:
- Preheat your oven to 425°F (218°C).
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Add in the cold, cubed butter. Using a pastry cutter or your fingers, cut butter into the flour mixture until it resembles coarse crumbs.
- Slowly add milk, stirring gently until the dough starts to form.
- Turn the dough out onto a floured surface and gently knead it 4-5 times until it holds together. Be careful not to overwork it.
- Roll or pat the dough to about 1-inch thickness and use a round cutter to form biscuits.
- Place the biscuits on an ungreased baking sheet, and bake for 12-15 minutes, or until golden brown.
3. Assemble and Serve:
- Split the shortcakes horizontally. Spoon a generous amount of the cooled strawberry compote over the bottom half.
- Top with whipped cream and place the second half of the biscuit on top.
- Serve with a scoop of vanilla ice cream on the side.
