Decadent White Chocolate Raspberry Truffle Delights with Macaron Crisps



Ingredients



- Truffle Filling
- 8 oz White chocolate, chopped
- 4 oz Cream cheese, softened
- 1/4 cup Mascarpone cheese
- 1/4 cup Powdered sugar
- 1/4 cup Fresh raspberries, lightly mashed

- Macaron Crisps
- 1 cup Almond flour
- 1 3/4 cups Powdered sugar
- 3 large Egg whites, at room temperature
- 1/4 cup Granulated sugar
- 1/2 tsp Vanilla extract

- Garnish
- 1/2 cup Whipped cream
- 1/4 cup Candied orange peel, finely chopped
- 2 tbsp White chocolate, grated
- 2 tbsp Fresh raspberries, whole

Instructions



1. Prepare the Truffle Filling
a. In a heatproof bowl over simmering water, melt the white chocolate, stirring until smooth. Set aside to cool slightly.
b. In a mixing bowl, blend the softened cream cheese, mascarpone cheese, and powdered sugar until smooth.
c. Gently fold in the melted white chocolate and mashed raspberries. Refrigerate for at least PT1H until firm.

2. Make the Macaron Crisps
a. Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
b. Sift almond flour and 1 3/4 cups powdered sugar together into a bowl.
c. In a separate large bowl, beat the egg whites until they begin to froth. Add granulated sugar gradually, and beat until stiff peaks form.
d. Gently fold in the vanilla extract followed by the dry almond mixture. Mix until smooth and glossy.
e. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto prepared baking sheets.
f. Tap the baking sheets to release any air bubbles.
g. Bake in the preheated oven for PT15M or until they rise and set. Allow to cool completely on the baking sheets.

3. Assemble the Dessert
a. Spread or pipe a generous dollop of the truffle filling onto the base of one macaron crisp.
b. Sandwich with another macaron crisp to create a truffle sandwich.
c. Decorate with whipped cream, a sprinkle of candied orange peel, grated white chocolate, and whole raspberries on top.
