Decadent Zucchini Chocolate Chip Bread
Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup pure cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white granulated sugar
- 1 cup shredded zucchini (squeezed dry)
- 1/2 cup sour cream
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet chocolate chips
- 1/4 cup chopped walnuts
- 1/4 cup chopped pecans
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9x5-inch loaf pan; set aside.
2. Combine Dry Ingredients:
- In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
3. Mix Wet Ingredients:
- In another bowl, beat together the melted butter and granulated sugar until well combined.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and sour cream until smooth.
4. Incorporate Zucchini:
- Fold the shredded zucchini into the wet mixture.
5. Combine Mixtures:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Add Chocolate and Nuts:
- Gently fold in the chocolate chips, chopped walnuts, and chopped pecans.
7. Bake:
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
8. Cool and Serve:
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve once cooled.
