Delectable Chicken Pot Pie with Roasted Vegetables and Flaky Crust



Ingredients



- 1 lb chicken breast, cubed
- 2 cups carrots, sliced
- 1 cup onions, diced
- 2 cups potatoes, diced
- 1 cup peas
- 2 teaspoons thyme seasoning
- 4 tablespoons butter, divided
- 1 sheet flaky pie crust
- 1 1/2 cups creamy filling (store-bought or homemade cream sauce)

Instructions



1. Preheat Oven:
- Preheat your oven to 400°F (204°C).

2. Prepare the Chicken:
- Season the cubed chicken with thyme seasoning, salt, and pepper.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the chicken cubes and cook until golden brown on all sides, about 8 minutes.
- Remove chicken from the skillet and set aside.

3. Roast the Vegetables:
- Add the carrots, onions, and potatoes to the same skillet.
- Add 1 tablespoon of butter and sauté the vegetables until they begin to soften, approximately 10 minutes.
- Stir in the peas and cook for another 5 minutes.
- Remove from heat and set aside.

4. Assemble the Filling:
- In a large mixing bowl, combine the cooked chicken and roasted vegetables.
- Stir in the creamy filling until everything is evenly coated.

5. Prepare the Pie:
- Roll out the flaky pie crust on a lightly floured surface.
- Place the crust in a deep pie dish.
- Fill the crust with the chicken and vegetable mixture, spreading evenly.

6. Top and Bake:
- Roll out another sheet of flaky crust to cover the pie.
- Seal the edges by pinching them together and cut slits in the top to allow steam to escape.
- Melt the remaining 1 tablespoon of butter and brush it over the crust.
- Bake in the preheated oven for 25 minutes or until the crust is golden brown and the filling is bubbly.

7. Serve:
- Let the pie cool for 10 minutes before serving to ensure the filling sets slightly.
