Delectable Homemade Egg Pasta with Olive Oil Sauce



Ingredients



- 2 cups all-purpose flour
- 3 large eggs
- 1 teaspoon salt
- 1 tablespoon olive oil (plus more for sauce)
- Salt to taste (for the sauce)

Instructions



Step 1: Prepare the Pasta Dough
1. On a clean countertop, create a mound with the flour and make a well in the center.
2. Crack the eggs into the well, and add 1 teaspoon of salt.
3. Using a fork, gradually incorporate the flour into the eggs, slowly pulling the flour from the inner rim of the well.
4. Once a thick dough starts to form, use your hands to knead the dough. Knead for about 10 minutes until the dough is smooth and elastic.
5. Wrap the dough in plastic wrap and let it rest for at least PT30M (30 minutes) at room temperature.

Step 2: Roll Out the Pasta
1. Divide the rested dough into four equal parts. Keep the pieces you're not using covered to prevent drying out.
2. Sprinkle some flour on a clean surface and flatten a piece of dough with your palm.
3. Use a rolling pin (or pasta machine) to roll out the dough into a thin sheet, about 1/8 inch thick.
4. Cut the rolled dough into your desired shape – tagliatelle or pappardelle work well. Dust the shapes lightly with flour to prevent sticking.

Step 3: Cook the Pasta
1. Boil a large pot of salted water over high heat. Once boiling, add the fresh pasta.
2. Cook for about PT3M (3 minutes), testing for doneness. Fresh pasta cooks quickly.

Step 4: Prepare the Olive Oil Sauce
1. While the pasta is cooking, heat 2 tablespoons of olive oil in a small saucepan over low heat.
2. Once warm, add a pinch of salt to taste.
3. Gently stir until the salt dissolves and the oil is infused.

Step 5: Combine and Serve
1. Drain the pasta and save a little pasta water.
2. Toss the warm pasta with the olive oil sauce and a splash of the reserved pasta water for a silky finish.
3. Serve immediately, garnishing with a drizzle of olive oil.
