- Marinade and Flavor Base:
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- Zest of 1 lemon
- 5 garlic cloves, minced
- 1 tablespoon fresh thyme leaves, chopped
- 1 tablespoon fresh rosemary leaves, chopped
- Salt and pepper to taste
- Garnish:
- Additional lemon slices for garnish
- Fresh thyme sprigs
Instructions
1. Preparation of Chicken:
- Preheat your oven to 425°F (220°C).
- Ensure the chicken is thoroughly cleaned and patted dry with paper towels.
2. Marinade Mixture:
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped thyme, chopped rosemary, salt, and pepper.
3. Marinating the Chicken:
- Place the chicken in a large baking dish.
- Rub the marinade all over the chicken, ensuring even distribution over and inside the cavity for maximum flavor.
- Let the chicken marinate for at least 30 minutes to 1 hour (ideally in the refrigerator) to absorb the flavors.
4. Roasting the Chicken:
- Place the marinated chicken breast-side up in the baking dish.
- Roast the chicken in the preheated oven for approximately 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) when checked with a meat thermometer.
- Baste the chicken with juices from the bottom of the pan every 20 minutes for optimal juiciness.
5. Resting and Garnishing:
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Garnish with fresh lemon slices and thyme sprigs before serving.
