Delectable Microwave Risotto with Spinach and Parmesan



Ingredients



- 1 tablespoon butter
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup Arborio rice
- 3 cups chicken broth
- 1/4 cup dry white wine
- 2 cups fresh spinach, chopped
- 1/2 cup Parmesan cheese, grated
- Salt and freshly ground black pepper, to taste
- Lemon zest, for garnish (optional)

Instructions



1. Preparation
- Prepare all ingredients and have them within easy reach. Finely chop the onion, mince the garlic, and chop the fresh spinach. Grate the Parmesan cheese and set aside.

2. Start the Risotto Base
- In a microwave-safe dish, combine the butter, chopped onion, and minced garlic. Microwave on high for 2 minutes, stirring halfway through, until the onion is soft and translucent.

3. Add Arborio Rice
- Add the Arborio rice to the onion mixture, stirring to coat the grains with butter. Microwave on high for another 1 minute.

4. Incorporate Broth & Wine
- Pour in the chicken broth and white wine. Stir well, cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam. Microwave on high for 10 minutes. Check halfway to stir.

5. Finish Cooking the Rice
- After 10 minutes, carefully remove the cover and stir. Microwave an additional 5-8 minutes, until the rice is tender and has absorbed most of the liquid.

6. Add Spinach and Cheese
- Stir in the chopped spinach and Parmesan cheese until the spinach wilts and the cheese melts. Season with salt and black pepper to taste.

7. Final Touches
- Let the risotto stand for 3 minutes. Garnish with lemon zest if desired before serving.
