Ingredients

Instructions
1. Prepare the Creamy Coconut Custard Base:
In a medium bowl, combine the Greek yogurt, coconut cream, lemon juice, and lemon zest. Mix until smooth and creamy. Set aside to allow the flavors to meld.
2. Toast the Pine Nuts:
Place a small sauté pan over medium heat. Add the pine nuts and toast them, stirring frequently, for about 3-5 minutes until golden brown and fragrant. Remove from heat and set aside to cool.
3. Sauté the Vegetables:
In the same pan, increase the flame slightly. Add the diced mixed vegetables and sauté for about 5 minutes until they become slightly tender while maintaining some crunch. Remove from heat.
4. Assemble the Snack Bites:
- On a serving platter, lay out the crumbled coconut custard and animal cookies as the base layer.
- Gently spread a spoonful of the creamy coconut custard base over each pile of crumbled cookies.
- Evenly distribute the mixed greens over the coconut custard layer.
- Place slices of smoked salmon atop the greens and spoon the sautéed vegetables over them.
- Sprinkle the entire dish with toasted pine nuts for added texture and flavor.
