Delectable Stove-Top Pesto Chicken Pasta
Ingredients
- 2 cups heavy cream
- 1 cup pasta water (reserved from cooked pasta)
- 1/2 cup panko breadcrumbs
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups rotisserie chicken, shredded
- 1 cup pesto sauce
- 2 cups roasted veggies (e.g., bell peppers, zucchini, mushrooms)
- 1 cup pulled pork
- 1 cup barbecue chicken, shredded
- Salt and pepper, to taste
- Additional grated Parmesan cheese (optional for garnish)
Instructions
1. Prepare the Pasta Water:
- Boil your preferred pasta according to package instructions. Before draining, reserve 1 cup of pasta water and set aside.
2. Start the Sauce:
- In a large skillet or saucepan over medium heat, pour 2 tablespoons of olive oil and add the minced garlic. Sauté until fragrant and golden, about PT2M (2 minutes).
3. Combine Cream and Pasta Water:
- Add the heavy cream to the skillet and stir gently. Slowly pour in the reserved pasta water and let the mixture simmer while stirring frequently. Allow it to reduce slightly, about PT5M (5 minutes).
4. Incorporate the Panko:
- Stir the panko breadcrumbs into the sauce. This will thicken it further and add a nice texture.
5. Mix the Proteins and Veggies:
- Add the shredded rotisserie chicken, pulled pork, barbecue chicken, and roasted veggies to the skillet. Mix well to coat all ingredients evenly with the creamy sauce.
6. Add the Pesto:
- Gently fold in the pesto sauce until all ingredients are covered, and the sauce turns a vibrant green.
7. Season the Dish:
- Season the dish with salt and pepper according to taste. Let the mixture simmer on low heat for an additional PT3M (3 minutes) to allow flavors to meld.
8. Serve:
- Serve the pasta in shallow bowls. If desired, sprinkle with extra grated Parmesan cheese for garnish.
