Delicious Boiled Potato Salad with Cucumber Dill Yogurt Sauce
Ingredients
- 2 lbs Yukon Gold potatoes
- 4 cups water
- 2 tablespoons Diamond Crystal kosher salt (for water) or 1 tablespoon Morton kosher salt
- 3 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 Persian cucumber, diced
- 2 tablespoons fresh lemon juice
- 1 teaspoon freshly ground black pepper
- Salt to taste
Instructions
1. Prepare the Potatoes:
- Scrub and wash the Yukon Gold potatoes thoroughly. Cut them into uniform bite-size pieces.
- Place in a large pot, add 4 cups of water, and season with 2 tablespoons of Diamond Crystal kosher salt or 1 tablespoon Morton kosher salt.
2. Boil the Potatoes:
- Set your stove to medium-high heat. Bring the water to a boil.
- Once boiling, reduce the heat to medium-low and allow the potatoes to simmer for about PT15M (15 minutes), or until fork-tender.
3. Make the Garlic-Dill Yogurt Sauce:
- While the potatoes are boiling, prepare the sauce.
- In a mixing bowl, combine 1 cup of plain Greek yogurt, minced garlic cloves, 2 tablespoons of fresh dill, diced Persian cucumber, 2 tablespoons of fresh lemon juice, 1 teaspoon of freshly ground black pepper, and salt to taste. Stir until well combined.
- Allow the sauce to rest for the flavors to meld.
4. Combine & Serve:
- Once the potatoes are cooked, drain them and let them cool for a few minutes.
- In a large bowl, gently combine the boiled potatoes with 3 tablespoons of extra-virgin olive oil, tossing to coat evenly.
- Pour the prepared yogurt sauce over the potatoes and gently fold to blend without breaking the potatoes.
- Garnish with additional fresh dill if desired and serve immediately.
