Delicious One-Pot Creamy Chicken and Broccoli Pasta
Ingredients
- 1 tablespoon olive oil
- 4 boneless, skinless chicken breasts (about 1.5 pounds), diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound penne pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups broccoli florets
- 1 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh parsley
Instructions
1. Sauté the Chicken:
Heat the olive oil in a large pot over medium heat. Add the diced chicken breasts and cook until they’re golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
2. Cook the Aromatics:
In the same pot, add the minced garlic and cook for about 1 minute until fragrant. Stir in the Italian seasoning, salt, and black pepper.
3. Prepare the Pasta and Sauce:
Add the penne pasta, chicken broth, and heavy cream to the pot. Stir to combine, then bring to a boil. Reduce the heat to low, cover, and simmer for about 10 minutes.
4. Add the Broccoli:
Stir in the broccoli florets. Cover the pot again and cook for an additional 5-7 minutes, until the pasta is al dente and the broccoli is tender.
5. Finish the Dish:
Return the chicken to the pot. Add the Parmesan cheese and lemon juice, stirring well to combine everything. Cook for another 1-2 minutes until the cheese is melted and the sauce is creamy.
6. Garnish and Serve:
Turn off the heat and sprinkle with chopped fresh parsley. Serve warm and enjoy your meal!
