Delicious Pumpkin-Cream Cheese Oatmeal Bars
Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
Wet Ingredients:
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For Cream Cheese Filling:
- 8 ounces cream cheese, softened
- 1/4 cup confectioners' sugar
- 2 tablespoons whole milk
Instructions
1. Preheat and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Line a 9x13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal. Set aside.
2. Mix Dry Ingredients:
- In a large bowl, combine the all-purpose flour, rolled oats, brown sugar, pumpkin pie spice, baking powder, baking soda, and kosher salt. Stir well to ensure everything is evenly distributed.
3. Blend Wet Ingredients:
- In a separate bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
4. Combine Mixtures:
- Pour the wet mixture into the dry ingredients. Stir until just combined, being careful not to overmix. The batter will be slightly thick.
5. Prepare Cream Cheese Filling:
- In a medium bowl, beat the softened cream cheese with the confectioners' sugar and whole milk until creamy and smooth.
6. Assemble the Bars:
- Pour half of the pumpkin-oat mixture into the prepared pan, spreading it evenly with a spatula.
- Evenly spoon the cream cheese filling over this layer.
- Carefully spread the remaining pumpkin-oat mixture over the top of the cream cheese layer. It’s okay if some cream cheese peeks through.
7. Bake:
- Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is set and slightly golden.
- Remove from the oven and allow to cool completely in the pan on a wire rack.
8. Serve:
- Once cooled, lift the bars out of the pan using the parchment paper overhang and cut them into squares.
