Ingredients
- 12 ounces ring-shaped pasta
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 tablespoons tomato paste
- 2 teaspoons tomato bouillon powder
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon kosher salt
- 6 cups water (for boiling pasta)
Instructions
1. Prepare the Pasta:
- Boil 6 cups of water in a large pot over high heat.
- Add 1 teaspoon of salt to the boiling water.
- Add the ring-shaped pasta and cook following package instructions or until al dente, which typically takes about 8-10 minutes.
2. Melt the Butter and Create the Sauce:
- While the pasta cooks, place a large skillet on the stove over medium heat.
- Add 2 tablespoons of unsalted butter and 1 tablespoon of olive oil. Allow the butter to melt completely.
3. Create Tomato Base:
- Stir in 3 tablespoons of tomato paste into the melted butter and oil.
- Add 2 teaspoons of tomato bouillon powder. Mix well to combine the flavors, cooking for about 2-3 minutes until aromatic.
4. Mix with Pasta:
- Once the pasta is cooked, reserve 1/2 cup of pasta cooking water, then drain the pasta.
- Add the cooked pasta to the skillet with tomato mixture.
- Add the reserved pasta water while stirring to help create a smooth sauce.
- Reduce the heat to low and fold in 1/2 cup of grated parmesan cheese until melted and well incorporated into the sauce.
5. Season and Finish:
- Taste and adjust seasoning with kosher salt if necessary.
6. Serve:
- Remove from heat and serve immediately, garnished with a sprinkle of additional parmesan if desired.
