Delicious Tuna Avocado Toast with Sun-Dried Tomato Aïoli
Ingredients
- 2 slices sourdough bread
- 1 can (5 oz) tuna, drained
- 2 green onions, finely chopped
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 cup arugula
- 1/4 cup fresh spinach
- 1 fresh tomato, sliced
- 2 tablespoons sun-dried tomatoes, finely chopped
- 1 tablespoon olive oil
Instructions
1. Prepare the Aïoli
- In a small bowl, combine the mayonnaise and sun-dried tomatoes. Mix well. Set aside.
2. Toast the Bread
- Heat a skillet over medium heat.
- Drizzle olive oil on both sides of the sourdough slices.
- Toast the slices in the skillet for about 3-4 minutes per side, or until golden brown and crispy. Remove from heat and set aside.
3. Make the Tuna Mixture
- In a medium bowl, combine drained tuna, green onions, lemon juice, and salt.
- Mix until all ingredients are well incorporated. Adjust seasoning if necessary.
4. Assemble the Toast
- Spread a generous layer of the sun-dried tomato aïoli on each slice of toasted sourdough.
- Place a few leaves of arugula and spinach on top of the aïoli.
