Ingredients



- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups buttermilk
- 1/4 cup milk
- 2 tablespoons lemon juice
- 1/4 cup Greek yogurt
- 2 tablespoons sugar
- 2 tablespoons melted butter (plus extra for greasing the pan)
- 1 large egg

Instructions



1. Prepare the Dry Ingredients:
In a large mixing bowl, combine 1 cup of all-purpose flour, 1 cup of whole wheat flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Stir well to ensure even distribution of the ingredients.

2. Mix the Wet Ingredients:
In a separate bowl, whisk together 1 1/4 cups of buttermilk, 1/4 cup of milk, 2 tablespoons of lemon juice, 1/4 cup of Greek yogurt, 2 tablespoons of sugar, 2 tablespoons of melted butter, and 1 large egg. Ensure the mixture is smooth and well combined.

3. Combine Wet and Dry Ingredients:
Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spatula or spoon until just combined. Be careful not to overmix; it's okay if the batter has a few lumps.

4. Preheat the Stove and Pan:
Set a non-stick skillet or griddle over medium heat and let it warm up. Test the heat by sprinkling a few drops of water on the surface; they should sizzle and evaporate quickly.

5. Cook the Pancakes:
