Deliciously Herb-Crusted Salmon with Asparagus and Lemon Butter Sauce
Ingredients
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh dill
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 1 lemon, zested
For the Asparagus:
- 1 lb asparagus, trimmed
- 1 tablespoon olive oil
- Salt and black pepper to taste
For the Lemon Butter Sauce:
- 1/4 cup unsalted butter
- 2 tablespoons fresh lemon juice
- 1 teaspoon minced garlic
- 1 tablespoon minced fresh thyme
Instructions
1. Prepare the Herb Crust:
- In a shallow dish, combine breadcrumbs, grated Parmesan, parsley, dill, garlic powder, lemon zest, salt, and black pepper.
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Brush the top of each fillet with olive oil, then press firmly into the breadcrumb mixture to form an even crust.
2. Cook the Salmon:
- Preheat your oven to 375°F (190°C).
- Place the crusted salmon fillets on a lined baking sheet.
- Bake in the preheated oven for 15 minutes until the crust is golden and the salmon flakes easily with a fork.
3. Roast the Asparagus:
- Toss the trimmed asparagus with olive oil, salt, and black pepper.
- Spread on another baking sheet and roast in the oven alongside the salmon for the last 10 minutes of its cooking time.
4. Make the Lemon Butter Sauce:
- In a small saucepan over medium heat, melt the butter until it begins to foam.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the fresh lemon juice and thyme, whisking well to combine.
- Simmer gently for 2 minutes and set aside.
5. Serve:
- Plate the herb-crusted salmon fillets alongside the roasted asparagus.
- Drizzle everything generously with the warm lemon butter sauce.
- Serve immediately for a fragrant and elegant presentation.
