Delightful Breakfast Skillet with Ham, Cheese, and Fig Medley
Ingredients
- 1 cup oat bran
- 4 ounces deli ham, chopped
- 2 ounces sharp cheddar cheese, shredded
- 2 large eggs
- 2 tablespoons fresh chives, finely chopped

- 4 slices prosciutto

Instructions
1. Prep Ingredients:
Prepare all ingredients by shredding cheeses, chopping the ham and chives, and slicing the mushrooms and figs.
2. Sauté Swiss Chard and Mushrooms:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Swiss chard and sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until the Swiss chard is wilted and mushrooms are tender.
3. Add Ham and Seasonings:
Stir in the chopped deli ham, roasted garlic, sun-dried tomatoes, and dried currants. Season with salt and black pepper. Cook for another 2 minutes to allow flavors to meld.
4. Incorporate Oat Bran and Olive Oil:
Add the oat bran to the skillet and drizzle with remaining olive oil. Stir well and cook for 3-4 minutes, allowing the oat bran to toast slightly.
5. Egg Mixture:
Beat the eggs and mix in shredded sharp cheddar cheese. Pour this mixture over the skillet contents, reducing the heat to low. Allow the eggs to cook, undisturbed, for about 4-5 minutes, or until set.
6. Top with Cheese and Figs:
Sprinkle shredded Gruyère and crumbled Chèvre over the mixture. Arrange sliced figs and prosciutto on top. Cover the skillet and cook for an additional 3 minutes to melt the cheeses.
7. Garnish and Serve:
Remove the skillet from heat. Garnish with chopped fresh chives and toasted walnuts. Serve hot.
