Delightful Cherry Almond Tarts with Vanilla Ice Cream



Ingredients



- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup almond flour
- 1 teaspoon almond extract
- 1 cup cherries, pitted and halved
- 1 sheet of shortcrust pastry (enough to fit a 9-inch tart pan)
- Vanilla ice cream, for serving

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Shortcrust Pastry:
Roll out the shortcrust pastry on a lightly floured surface to fit into a 9-inch tart pan. Gently press the pastry into the pan, trimming any excess. Prick the bottom with a fork to prevent it from puffing up.

3. Blind Bake the Pastry:
Line the pastry with parchment paper and fill it with pie weights or dried beans. Bake for 10 minutes. Remove the weights and parchment paper, then bake for an additional 5 minutes until lightly golden. Set aside to cool.

4. Make the Almond Filling:
In a medium bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the almond extract. Gradually fold in the almond flour until the mixture is well combined.

5. Assemble the Tart:
Spread the almond filling evenly over the cooled shortcrust pastry. Arrange the cherry halves on top of the almond filling, pressing them gently into the mixture.

6. Bake the Tart:
Bake in the preheated oven for 25-30 minutes, or until the filling is set and lightly browned. A toothpick inserted into the center should come out clean.

7. Cool and Serve:
Allow the tart to cool in the pan for at least 10 minutes before removing. Slice and serve warm or at room temperature with a scoop of vanilla ice cream.
