Delightful Greek Yogurt Breakfast Bread
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt
- 2 large eggs
- 1/4 cup olive oil
- 1/4 cup mixed seeds (sunflower, sesame, pumpkin seeds), optional
Instructions
1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan lightly with olive oil or non-stick spray to prevent sticking.
2. Mix Dry Ingredients:
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
3. Combine Wet Ingredients:
In another bowl, whisk the Greek yogurt, eggs, and olive oil until the mixture is smooth and the eggs are fully incorporated.
4. Create the Batter:
Pour the wet ingredients into the dry ingredients bowl. Gently fold the ingredients together using a spatula, making sure not to overmix. The batter should be thick and slightly lumpy.
5. Add Optional Seeds:
If you wish to add a crunchy texture, fold in the mixed seeds gently. Reserve a small amount to sprinkle on top for a decorative finish.
6. Transfer to Baking Pan:
Carefully pour the batter into the prepared loaf pan, spreading it evenly with a spatula. Sprinkle the reserved seeds on top if using.
7. Bake:
Place the loaf pan in the preheated oven on the middle rack. Bake for approximately 45-50 minutes. Check for doneness by inserting a toothpick into the center of the bread; it should come out clean.
8. Cool and Serve:
Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes. Carefully transfer the bread to a wire rack to cool completely before slicing and serving.
