Delightful Mediterranean Pasta Salad with Artichokes and Pepperoni
Ingredients
- 8 oz pasta (preferably fusilli or rotini)
- 1 cup marinated artichokes, drained and chopped
- 1/2 cup green olives, sliced
- 1 cup provolone cheese, diced
- 1/2 small red onion, thinly sliced
- 1/2 cup pepperoni, sliced into thin strips
- 1 cup canned black-eyed peas, drained and rinsed
- 1/2 cup mayonnaise
- 1/4 cup Italian dressing
Instructions
1. Cook the Pasta
- Boil a large pot of water on the stove with a pinch of salt.
- Add 8 oz of pasta to the boiling water.
- Cook for approximately 8-10 minutes until the pasta is al dente. Stir occasionally to ensure even cooking.
- Drain the pasta in a colander and rinse with cold water to stop the cooking process. Allow it to cool completely.
2. Prepare the Ingredients
- Drain and chop 1 cup of marinated artichokes into bite-sized pieces.
- Slice 1/2 cup of green olives and dice 1 cup of provolone cheese.
- Thinly slice 1/2 small red onion, and cut 1/2 cup of pepperoni into thin strips.
- Drain and rinse 1 cup of canned black-eyed peas.
3. Combine the Ingredients
- In a large mixing bowl, combine the cooked pasta, chopped artichokes, sliced green olives, diced provolone cheese, sliced red onion, pepperoni strips, and black-eyed peas.
4. Prepare the Dressing
- In a small bowl, whisk together 1/2 cup of mayonnaise and 1/4 cup of Italian dressing until smooth.
5. Mix the Salad
- Pour the dressing over the pasta mixture and toss gently to coat all the ingredients evenly.
- Taste and adjust the seasoning if necessary.
6. Chill the Salad
- Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
7. Serve
- After chilling, give the salad a final stir and serve chilled on individual plates or a large serving dish.
