Delightful Oven-Baked Breakfast Frittata



Ingredients



- 8 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup baby spinach leaves, washed and dried
- 1/2 red bell pepper, diced
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 tablespoon butter

Instructions



1. Preheat Oven
Preheat your oven to 350°F (175°C) to ensure even cooking.

2. Prepare the Ingredients
- In a large mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until fully combined.
- Separately, prepare vegetables by dicing the red bell pepper and onion, and halving the cherry tomatoes.

3. Sauté Vegetables
- Heat the olive oil and butter in an oven-safe skillet over medium heat.
- Add the diced onion and sauté for about 3 minutes or until translucent.
- Add the diced red bell pepper and continue cooking for another 3 minutes.
- Stir in the halved cherry tomatoes and baby spinach leaves, sautéing until the spinach is just wilted, about 2 minutes.

4. Add Egg Mixture
Pour the egg mixture evenly over the sautéed vegetables in the skillet. Let it cook on the stovetop for 2-3 minutes until the edges start to set.

5. Sprinkle Cheese
Generously sprinkle the shredded cheddar cheese on top of the egg mixture.

6. Bake the Frittata
Carefully transfer the skillet to the preheated oven. Bake for 25 minutes until the frittata is puffed and golden brown and a toothpick inserted in the center comes out clean.

7. Cool and Serve
