Ingredients


- 2 cups water
- 1 cup dried pinto beans
- 2 tablespoons oil (olive or vegetable)
- 1 large onion, finely chopped
- 1 teaspoon salt

Instructions



1. Prepare Pinto Beans
- Rinse the pinto beans thoroughly under cold water, removing any debris or damaged beans.

2. Soak the Beans
- Place the rinsed pinto beans in a large microwave-safe dish. Add 2 cups of water.
- Microwave the beans on high for PT10M (10 minutes). After the time has elapsed, allow the beans to stand in the microwave for another PT30M (30 minutes). This soaking process helps to soften the beans quickly.

3. Cook the Beans
- After soaking, drain the beans and return them to the microwave-safe dish.
- Add 2 cups of fresh water to the beans.
- Cover the dish with microwave-safe plastic wrap or a well-fitting lid, leaving a small vent for steam to escape.
- Microwave on high for PT30M (30 minutes), stirring once halfway through cooking.

4. Prepare the Onion
- While the beans are cooking, heat 2 tablespoons of oil in a microwave-safe dish.
- Add the finely chopped onion and microwave on high for PT2M (2 minutes), or until the onion is translucent and fragrant.

5. Combine Ingredients
- Remove the beans from the microwave once cooked and tender.
- Stir in the cooked onion and 1 teaspoon of salt.
- Cover and microwave for an additional PT5M (5 minutes) to let the flavors meld together.

6. Finish and Serve
