Eggy Maple Melt on Milk Bread
Ingredients
- 4 large eggs
- 3 tablespoons Kewpie mayonnaise
- 2 tablespoons maple syrup
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 4 slices of milk bread
- 1 tablespoon unsalted butter
Instructions
1. Prepare the Egg Mixture:
- In a medium bowl, whisk together the eggs, Kewpie mayonnaise, maple syrup, salt, and white pepper until fully blended and smooth.
2. Cook the Eggs:
- Heat a non-stick skillet over medium-low heat. Add the unsalted butter, swirling the pan until it's melted and coats the bottom.
- Pour the egg mixture into the skillet. As it begins to set around the edges, gently stir with a spatula to form soft curds. Continue to cook, stirring occasionally, until the eggs are cooked through but still creamy. This should take about 5 minutes.
3. Assemble the Sandwich:
- Toast the slices of milk bread lightly in a separate pan or toaster until they are golden brown.
- Divide the cooked eggs evenly over two slices of the toasted milk bread.
- Top with the remaining slices of milk bread, pressing down gently to secure them.
4. Finish on the Stove:
- Place the sandwiches back into the skillet over low heat. Cook each side for about 2-3 minutes until the outside is crisp and the inside is warmed through and melty.
- Remove from the skillet, allow to cool slightly, then slice each sandwich in half before serving.
