Elegant Cognac-Infused Chicken with Creamy Sauce
Ingredients
- 4 boneless, skin-on chicken breasts
- 2 tablespoons unsalted butter
- 1/4 cup cognac
- 1 cup chicken stock
- 1/2 cup beef stock
- 1 tablespoon Better Than Bouillon (chicken or beef variety)
- 1/4 cup heavy cream
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
Instructions
1. Prepare the Chicken:
- Pat the chicken breasts dry with paper towels. Season each breast with salt and freshly ground black pepper on both sides.
2. Saute the Chicken:
- In a large skillet over medium-high heat, melt the unsalted butter. Once the butter is hot and begins to froth, carefully place the chicken breasts skin-side down into the skillet.
- Sauté the chicken for approximately 5-6 minutes on each side, or until golden brown and cooked through with an internal temperature of at least 165°F (74°C). Remove the chicken from the skillet and set aside.
3. Deglaze with Cognac:
- Carefully pour the cognac into the skillet. Use a wooden spoon to gently scrape the browned bits from the bottom of the skillet. Cook for about 1-2 minutes until the cognac has reduced slightly.
4. Prepare the Sauce:
- Stir in the chicken stock, beef stock, and Better Than Bouillon. Bring the mixture to a simmer and let it reduce by half, which should take about 5-7 minutes.
- Add the heavy cream and apple cider vinegar to the skillet. Stir to combine and let the sauce simmer for another 2-3 minutes, until thickened.
5. Combine Chicken and Sauce:
- Return the chicken breasts to the skillet, spooning the sauce over the top. Let the chicken simmer in the sauce for an additional 2 minutes to absorb the flavors, stirring occasionally.
6. Serve:
- Transfer the chicken to a serving plate and drizzle the creamy sauce over it. Garnish with freshly ground black pepper if desired.
